Supervise inmates to ensure that food items are prepared in accordance with OP-X production requirements. Trains workers in methods of performing duties and assigns and coordinates work to promote efficiency of operations. This position participates in the preparation and serving of meals and food items. May requisition supplies and equipment to maintain inventory levels.

a) Prepare all food items according to recipe cards and prep lists according to OP-X standards.
b) Adhere to proper food handling procedures.
c) Maintain proper production levels according to estimates on the production sheets. 
d) Maintain proper rotation of food to assure top quality and freshness.
e) Collect leftovers, cover, label and properly store according to OPX standards.
f) Maintain clean and orderly refrigerators and work areas. Make sure the stations are properly cleaned, sanitized, and organized at the end of the shift. (Including cleaning of kitchen equipment)
g) Follow and adhere to the Correctional Facility security polices. Ensures that all kitchen tools, keys and equipment are returned to their designated secure area. Ensures storage areas are locked at all times. Ensures all keys are returned and secured. 
h) Maintain a safe, sanitary work environment, which conforms to all standards and regulations. Adhere to safety policies and accident reporting procedures.
i) Completes all required training.
j) Perform other responsibilities as assigned.
