Prospect Capital Restaurants has quickly grown to a multi-brand, multi-unit concept company and we do not see an end in sight. PCR started its journey in the restaurant industry with Jersey Mike’s, a New Jersey based sub shop with a strong culture and an exciting thirst for growth across the country. Starting with one location, we pushed hard into the North Jersey market and opened 10 locations over the span of 4 years. Since then, we’ve been working hard to continue to expand Jersey Mike’s and Wingstop locations. We currently operate over four regions including New Jersey, New York, Boston, and Indianapolis.
